Chocolate of the Gods Mousse with Fresh Berries and Mint.

In keeping with the Valentine's Day theme treat yourself to this Delicious Chocolate of Gods Mousse one of my favorites and a must try. This is one chocolate recipe you can feel good about eating as it has all natural ingredients.

Chocolate Mousse

3 nice Avocados
6 soft dates, pitted and soaked
4-6 tsps of maple syrup or agave nectar
1-1/2 Tbls non-alcohol vanilla extract
3/4 cup of raw carob powder
4-6 Tbls of organic cocoa powder or raw chocolate powder
tiny pinch of sea salt


Pit the dates and soak in 1/2 cup fresh water for 5-10 minutes to soften. Drain the water and set aside.  In a food processor blend: softened dates, maple syrup (or agave), and vanilla until smooth. Add the soaked water from the dates a tablespoon at a time to aid blending if necessary.  Spoon in avocado and blend until smooth. Scrape the walls if necessary with a rubber spatula.  Spoon in carob and cocoa powder, a pinch of salt and blend until smooth. Add a touch more cocoa for a "dark" chocolate mousse.

Divide the mousse in half and spoon into 4-6 parfaits or wine glasses. Divide 1 pint of raspberries or sliced strawberries on top of the mousse. Spoon the remaining mousse on top of the berries, top with remaining berries and then garnish with mint.
