Mango Banana Kiwi Pie

Date: July 1, 2009 Author: Mary Luciano Categories: Real Recipes

Mangos (especially Ataulfo manogs), Bananas and Kiwi three of my favorite fruits all together make up this delicious pie created by Jackie Graff.

The 4 Day Raw Food Extravaganza came with more food than I expected to eat. After Sundays Raw Food Revival Day I had to skip breakfast and lunch the next day to make room for the evening dishes. All the food was delicious but this by far was my favorite dessert.

1 cup macadamia nuts, soaked 8 hours and drained
4 Ataulfo Mangos, peeled
2 bananas
1/2 vanilla bean1 tsp sea salt
1 Tbsp psyllium
1 Nut and Date Pie Crust (see recipe below)
3 kiwis, peeled and sliced for garnish

  1. Place macadamia nuts, mango, banana, vanill bean, and salt, in blender and blend.
  2. Add pyllium and blend well. Let mixture sit for 5 minuts to thicken and blend again.
  3. Add more psyllium if mixture needs thickening.
  4. Spoon into a prepared pie crust. Place sliced Kiwi slices on top of pie and serve.
